Basic Sponge Mixture

Not a real sponge, but an easy to make, vegan sponge which we adopted years ago and have made ever since. It rises a treat and never gives any problems, despite not having any eggs in it. Non-vegans can substitute honey for the sugar or you can use concentrated apple juice, but it does tend to interfere with the rise - which is why we have stuck with sugar.


4oz (100g) white self raising flour
4oz (100g) wholemeal self raising flour
4oz (100g) margarine
4oz (100g) muscovado or soft brown sugar 
2oz (50g) dried fruit - currants, raisins, sultanas
1 teaspoon baking powder
1 teaspoon ground ginger
4 to 6fl oz (125-175ml) cold water or apple juice


  1. Mix together the dry ingredients, including the dried fruit, in a mixing bowl, until everything is evenly distributed.
  2. Melt the margarine and add to the dry mix. Then add the water until a runny cake mixture consistency is reached.
  3. Choose one of Pear & Ginger Sponge Pudding , Pear & Chocolate Sponge Pudding, Apple Sponge Pudding, Blueberry Sponge Pudding and Spicy Fruit Pudding.
